Researchers from the University of Montreal have highlighted the low nutritional value of products in the fourth category. A study conducted in 2023 found a correlation between the consumption of ultra-processed foods and cancer. Another study from 2019 established a link between these foods and type 2 diabetes.

Moreover, many ultra-processed foods contain emulsifiers, which have been associated with disruptions in gut microbiota. Such alterations may lead to inflammatory conditions, further complicating health issues.
